Okay, getting into the era of underappreciated Disney movies. I love Atlantis. I wanted to bake something that captured the whole vibe of Atlantis itself, from the underground earthiness to the glow of the crystals, so I settled on a hearty rum cake.
For this recipe, you will need:
- 1 can coconut milk
- 1 TBS apple cider vinegar
- zest from 2 limes
- 1 3/4 cups flour
- 1 tsp baking soda
- 1/2 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1/2 cup maple syrup
- 4 TBS spiced rum
- Blue food coloring
- 1 cup powdered sugar
- 1/2 cup dairy-free milk
Start by preheating the oven to 320F and grease a loaf pan. Then, mix the coconut milk together with the vinegar and lime zest. Set it aside while you mix together the rest of the ingredients.
In a separate bowl, combine the flour, baking soda, nutmeg, cinnamon, and a pinch of salt. Then, one spoonful at a time, incorporate the dry ingredients into the milk mixture.



Add the maple syrup and rum, and mix it into a smooth cake batter. Then add a few drops of teal, turquoise, or blue food coloring to create that Atlantean glow.

Pour the batter into the loaf pan and bake for 50-60 minutes.
While your cake is baking, combine the powdered sugar with non-dairy milk for a quick glaze. Adjust the ratio to create your own desired consistency. When the cake is done baking, let it cool before drizzling the icing over the cake. Enjoy!
