There was simply no other choice for The Emperor’s New Groove. I adore Kronk and wanted to make spinach puffs that even Yzma would enjoy.

For this recipe, you will need:

  • 1 TBS olive oil
  • 1 shallot
  • 3 cups spinach, chopped
  • 2 cloves minced garlic
  • 3 TBS fresh dill, chopped
  • 4 oz. vegan cream cheese
  • 1 fake egg of choice
  • Salt and pepper
  • Frozen puff pastry — alternatively, I have a Puff Pastry recipe listed in “Star Shaped Mushroom Puffs

First, preheat the oven to 450F and lightly grease a muffin tin. Then, we’re gonna start with the aromatics. Heat up a little bit of olive oil into a skillet, and cook up your shallot until it’s slightly transparent. Then, add the spinach, garlic, and dill. Cook it until the spinach is wilted and you can just smell the garlic.

In a large bowl, combine the spinach mixture with the cream cheese, your fake egg, and salt and pepper. This will be the spinach filling.

Then, roll out the puff pastry and cut it into 12 squares. Place each pastry square into a cup in the muffin tin.

Fill each square with about a tablespoon of the spinach mixture. Then pinch the corners of the pastry sqaures together, and use a bit of soy milk as an egg wash. Sprinkle some coarse sea salt on top and bake for about 25 minutes.
