While I LOVE the Toy Story series, I’ve been presented with the challenge of coming up with 4 different bakes (and maybe more, who knows) for the same set of characters. While my first bake wasn’t specific to a character, I obviously couldn’t use Pizza Planet as an out on this one. But I figured, why not keep it to the savory for now? And decided to make a play on Mr. Potato Head – boulangere potatoes.
For this recipe, you will need:
- About 5 pounds of sebago or russet potatoes, peeled
- 1 TBS fresh thyme leaves
- 3 garlic cloves
- 1/3 cup extra virgin olive oil
- 1 tsp black pepper
- 2 tsp vegetable stock bouillon
- 1/3 cup hot water
- 1 tsp salt
- 1/4 cup vegan parmesan
Start by preheating the oven to 350F and prepare an 18 x 28 cm baking pan with cooking spray. Then, use a mandolin to slice the potatoes very thin and transfer the slices to a large bowl. Put the thyme and garlic into a food processor and process until finely chopped. Pour the thyme mix over the potato slices, add pepper, and toss it all together.
Take the potato slices and arrange them, standing upright, into two rows in the prepped pan. Blend the stock bouillon with hot water until it dissolves, and pour it into the center of the potato rows. Sprinkle the potatoes with salt.
Cover the whole pan with foil and bake it for 30 minutes. Remove the foil, then bake it for an additional 40-45 minutes, until the potatoes are tender and crispy. Finally, sprinkle the top of the potatoes with the vegan parm and extra thyme.
These potatoes are absolutely delicious!
