We have reached the age of Pixar, and with such a direct connection as Pizza Planet, how could I NOT make pizza for Toy Story?
So here’s what you need:
Dough:
- 2 1/4 tsp yeast
- 2 TBS olive oil
- 1 tsp salt
- 3 cups flour
- 1 cup warm water
Toppings:
- 1/2 cup each of red, green, and orange bell pepper
- 1/3 cup red onion
- 1 cup mushrooms
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/2 cup vegan parmesan
- red pepper flakes
- dried oregano
Sauce:
- 1 15oz can tomato sauce
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp sugar
- 1/4 tsp salt
So first, in the bowl for your stand mixer, pour in the warm water and sprinkle in the yeast. Let it stand until it starts to foam, about 5 mins. Then, add the sugar, oil, and salt into that mixture. Make sure you’re using the dough hook, then turn the mixer on low as you add the flour. Let it mix until a dough ball forms. Then knead it on a floured surface until it is smooth. Put it in an oiled bowl, cover with plastic wrap, and leave it somewhere warm to rise for about an hour.

Meanwhile, preheat the oven to 425F and prepare the sauce and toppings. Bring a large skillet to medium heat. Add 1 TBS of olive oil, the red onion, and the bell peppers, chopped. Season the veggies with salt and herbs and stir. Continue cooking until the veggies are lightly charred, then add the mushrooms in the last few minutes.


For the sauce, I used a canned tomato sauce as a base and added a few seasonings to it.
Once your dough is ready, split it into six small pieces and roll each one out into a circle. Top each mini-pizza with tomato sauce, vegan parmesan, and veggies. Then bake for 15-18 minutes.



Serve your slices with the remaining parmesan, dried oregano, and red pepper flakes!
