If there is a food in a movie, I like to try to replicate it. Which brings us to cheese crumpets from The Great Mouse Detective. Thing is, Mrs. Judson’s crumpets look a bit more like muffins than crumpets. So… cheese muffins. That we’ll call crumpets. Close enough!
For this recipe, you will need:
- 1 1/2 cups flour
- 2 TBS sugar
- 1 TBS baking powder
- a pinch of salt
- 3 cups shredded vegan cheese of choice
- 1 cup soy milk
- 3 TBS aquafaba
- 1/4 vegan butter, melted
Start by preheating your oven to 375F and preparing a muffin tin. Then, mix together the sugar, baking powder, and salt.

Add the cheese to the dry ingredients. In a separate bowl, mix together the aquafaba, soy milk, and the melted butter.

Combine the two sets of ingredients (wet and dry), scoop into the muffin tin, and bake for 20 minutes.
