I kind of struggled to come up with something for Robin Hood. I wanted something hearty, but also forest-vibes. The connection is loose, but there could be apple trees in Sherwood Forest, right?

So, here’s what you need for this recipe:

  • 1/2 cup vegan butter
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 1 1/2 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dairy-free milk
  • ~2 cups chopped apple (like 1 or 1 1/2 apples, peeled and chopped)
  • 1/3 cup light brown sugar
  • 1 tsp cinnamon
  • 1 cup powdered sugar
  • 1-3 TBS dairy-free milk
  • 1/2 tsp vanilla

Start by preheating the oven and prepping your muffin pan with liners. Then, whisk together the flour, baking soda, baking powder, and salt together. Then, beat together the butter and sugar in a stand mixer. Add the applesauce and vanilla to the butter mix.

Combine the dry ingredients with the wet and mix on low until they are just combined. Then, gently fold in your apple chunks.

To make a cinnamon streusel/swirl, just combine the brown sugar and cinnamon in a small bowl. Spoon the muffin batter into the prepared muffin tin, top with the cinnamon swirl, and bake for 20-25 minutes.

While your muffins are baking, make a simple glaze. Whisk together the powdered sugar, 1-3 TBS of soy milk, and 1/2 tsp vanilla. You can add powdered sugar or milk to create your desired consistency. Set this aside until your muffins are fully baked and cooled.

If you want to make Texas muffins like I did, add about 10-15 minutes to the bake time for a total of 35-40 minutes.

Now you have delicious apple cinnamon muffins! Just don’t let Prince John tax you for ’em.
