Alright, the last two bakes have been delicious, but also very decoration-intensive. So for 101 Dalmatians, let’s simplify a bit. My first thought was BROWNIES! And then I thought… how to I make this on theme? So I decided to add a cheesecake layer, and instead of marbling the layers together, I could create spots within the cheesecake using the brownie batter.

So, here’s what you’ll need for the cheesecake mix:

  • 8 oz vegan cream cheese
  • 2 TBS vegan butter
  • 1/2 cup sugar
  • 2 “eggs”
  • 4 TBS vegan sour cream
  • 4 TBS flour

And here’s what you’ll need for the brownie batter:

  • 1/4 cup vegan butter
  • 1/2 cup sugar
  • 2 “eggs”
  • 1/4 cup vegan sour cream
  • 1/2 tsp vanilla
  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 oz vegan chocolate, melted

First, preheat the oven to 350F and prepare a 9×9 baking pan. Beat the cream cheese, vegan butter, and sugar together in a medium bowl until it is smooth, then add the fake egg mixture, vanilla, and sour cream.

Add in the flour and set the mixture aside.

Next, in a different bowl, beat 1/4 cup vegan butter, 1/2 cup sugar, two “eggs”, 1/4 cup vegan sour cream, and vanilla until it is smooth and creamy. Then add the dry ingredients. Once everything is mixed together, beat in the melted chocolate.

Spread about half of the chocolate mixture into the bottom of the pan, then top it with the cream cheese mixture. With the remainder of the chocolate mixture, drop it over the cream cheese mix to create spots. You can also use this recipe to make marbled cheesecake brownies by using a knife or skewer to marble them together.

Bake the cheesecake brownies for about 25-28 minutes, then let them cool for at least 2 hours. Then, refrigerate them until the cheesecake mixture is fully set. Slice and enjoy!
