With Peter Pan on the docket, I wanted to make something both playful AND quintessentially British. First, I thought of jammie dodgers, and then I thought of making a spin of jammie dodgers. They’re star-shaped, to represent the second star to the right, for one, and they’re not sandwiched together, for two. The idea of making them WITHOUT sandwiching the jam between two cookies made me really nervous, but I had two thoughts of how it could go.

For this recipe, you will need:

  • ~1 cup raspberries
  • 1/4 cup sugar
  • 1 tsp lemon juice
  • 1/2 cup vegan butter
  • 1/2 cup powdered sugar
  • 1 “egg” yolk
  • 1/2 tsp vanilla
  • 3/4 cups plus 2 TBS flour
  • 2 TBS cornstarch

First, chop the raspberries, and combine then with the sugar and lemon juice in a small saucepan. Heat this mixture over medium heat for 8-10 minutes, or until thickened. Press the mixture through a fine-mesh sieve to try to get the raspberry seeds out. This will be your jam!

For the cookies, prepare an “egg yolk” from the fake egg you prefer. Preheat the oven to 350F. In the bowl of a stand mixer, cream the butter and powdered sugar together until light and fluffy, then add the egg yolk and vanilla. Beat until the dough has just combined. Finally, add the flour and cornstarch.

Next comes the tricky part. Roll the dough into balls. Flatten each ball into a mostly round shape, and use a cookie cutter to cut (or lightly press) a star shape out of each. Fill the star shape with your raspberry jam and bake for 10-12 minutes!

My first batch, I cut all the way through the dough, even though I wasn’t 100% sure how, or even if, the jam would stay in place when baked. But it DID and it had a really cool, almost stain-glass effect. However, I was rolling out the second batch while the first was cooking, and I second-guessed cutting all the way through, so I made an indent and tried to keep it roughly star-shaped. These ones looked slightly less neat, but still tasted good. I also baked some dough that was just star-shaped cookies, to avoid wasting so much dough.

Plate your cookies, and add a bit of edible glitter spray to really get that pixie dust effect!
