Alice in Wonderland is probably my favorite movie from the Silver Age. I wanted to think of something clever and whimsical for such a silly film. The scene with the Mad Hatter and the March Hare is the most memorable to me, and so I decided to bake something that connected to that scene, and Tea Time, in particular. I settled on an Earl Grey Sugar Cookie.

For this recipe, you’ll need:

  • 1/4 cup sugar
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla bean paste
  • 1/2 cup vegan butter
  • 1 egg replacer egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp earl grey tea leaves (you can cut open a tea bag and measure from there)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  1. In a stand mixer, cream the vegan butter with the sugar, powdered sugar, and vanilla bean paste.
  2. Add in your egg and vanilla extract.

3. In a separate bowl, measure out the flour, tea leaves, salt, and baking powder. Stir, then slowly add to the butter mixture until a soft dough forms.
4. On a clean work surface, roll the dough into a log and wrap it with plastic wrap. Refrigerate the dough for at least 2 hours.

Preheat the oven to 400 F and line a few baking pans. After your dough is chilled, you can simply slice it into rounds to bake, or wait until it is malleable, about 10 minutes, and roll it out to cut into shapes. I HAD to use the most adorable teapot and teacup cookie cutters I found, but that’s not mandatory! Get those cookies on your baking tray and bake for a quick 6-8 minutes.

It’s as simple as that! These cookies turned out so buttery and delicious, and the earl grey is perfectly subtle. Bake and enjoy for a Very Merry Unbirthday!
