Keeping it simple with this one– I chose to make breadsticks. More specifically, grissini (the nice, thin ones!) because one of the most memorable things about Pinocchio is, of course, the nose growing when he lies. Grissini can look exactly like a twig nose. Plus, the story originated in Italy, and these will go great with any Italian dinner.
The best part about this recipe is that it’s naturally vegan, no substitutions needed. For this recipe, you’ll need:
- 1 2/3 cups bread flour
- 1/2 cup warm water
- 2 1/4 teaspoons of active dry yeast
- 1 tablespoon of sugar
- 3 tablespoons of olive oil
- 1 teaspoon of thyme
- 1/2 teaspoon of garlic powder
- a pinch of salt.
The first thing to do, just like with any bread recipe, is to prepare your yeast. Combine half a cup of warm water with a tablespoon of sugar. For the water, I like to do the “finger test”. If I can stick my finger in for a few seconds and feel that the water is warm, but not too hot that it hurts, it’s probably the right temperature. Stir the sugar in until it dissolves. Then, add in your yeast and leave it sitting for about 10 minutes, until the yeast starts to bloom.

In another large bowl, combine all the dry ingredients (bread flour, thyme, garlic powder, and salt) and quickly whisk it together.

From there, also add the olive oil. Create a small well in the center of your dry ingredients and add the yeast mixture. Stir it in, then begin to use your hands to help the dough come together. If it is not sticking, add more water, 1 tablespoon at a time. Transfer this dough into a slightly oiled bowl covered with plastic wrap, and let it rise for about 40 minutes.

Once the dough has risen, preheat the oven to 350F/175C and line 2 baking sheets with parchment paper. Separate the dough into 20 small pieces. Roll each piece out into a thin stick shape, pulling with your fingers to stretch it out. Place each stick on the baking sheet and brush it with olive oil and a sprinkle of salt. Bake for about 15 minutes, until light brown.


Et voila! This is a very straightforward bake, but delicious nonetheless. Pair with a glass of your favorite wine and a plate of your favorite pasta.
